David

David has been cooking and catering for large and small groups for over 20 years. After leading a company with over 50 seasonal staff, he’s excited to work with you and your families to create delightful and unique experiences that bring people together. In addition to cooking, he loves biking, exploring mountains and rivers with his family, and playing games. He’s especially excited about weddings that involve capture-the-flag, trivia and/or traditional folk dancing of any kind. His first experience with a bain marie was making creme brulee as a kid. A decade later he had attended the Better Process Control School and was using a tilt table to can 1000 quarts of peaches and tomatoes in the basement of a cooperative kitchen.

Propane torches and reverse-seared rib roasts (pictured) are still giving him thrills to this day.

Josie

After learning to manage a sprawling cooperative kitchen - serving 120 people plant based dinners weekly - Josie took her love of feeding others a step further and learned to farm animals, vegetables, and herbs. In addition to growing food and working in kitchens, she spent 8 years as a professional chocolatier and confectioner, where the bain marie is a crucial tool in the science of tempering. She makes cream-filled cupcakes for pleasure, obsesses over novel flavor combinations, and can’t help but micromanage the exact size and shape of the crudités…

…actually just give her the knife, she’ll cut them herself.

Jonah

Diving into organic vegetable farming and off-premise catering all at once taught Jonah a lot of lessons about the bonds that are created when people get their hands dirty together. He is excited about orchestrating multi-day events and sourcing the best seasonal produce Vermont has to offer. If you’re eating tomatoes, elderberries, onions, squash or putting maple syrup into or on top of anything there is a good chance he grew them.

Jonah isn’t a custard queen, but his background in plumbing and wood-fired radiant heating systems means he could build the most steam-punk bain marie ever.
